For carbs, a weber 32/36 will bolt up... it's the carb the holly was designed off of and is really a better flowing and more reliable carb. I have also used a weber 38/38 with some success, it offered a broader powerband, but not really much more up top.
The major difference between the HO and standard motors is that the block has been decked for higher compression. If you're re-building a motor it really won't matter which motor you start with, just blueprint it to 10.5:1 compression and you'll effectively have the same this as if you found a HO engine with all the factory tolerences in your favour.
