If you are unsure about working on these cars...I would recommend a Haynes or other type of service manual. They go pretty much step by step through the whole process and are very useful for many other jobs. Defiantly worth the money. And no matter what anyone tries to tell you to do...I would ALWAYS take your time and take the whole head off and clean the surface really well.
Personally I would use the Mopar Performance 2005 head gasket, and not a FelPro. A lot of people have complained about them, but I don't want to start something here by saying they're bad, because I have one in a 87 Labaron and it's working just fine. It's just not worth the risk, because I know the Mopar ones work.
