Car - 1988 Chrysler Daytona Pacifica (Turbo I, Automatic)

Problem - Off (what only seems to be at) cold start, the temp guage will go up pretty high...and in odd intervals. Like when coming to a stop at idle, say it's at 1/2, it will say there, then within like 2 seconds when i hit the gas it will go from 1/2 to 3/4. Then after it gets warm (sometimes revving/racing causes this) the temp will drop from say 3/4 or higher to 1/4 or sometimes less in about 1 second flat. I'm convinced it's not an actual coolant related issue because the heater is consistent, not HOT or cold spots when heat is on. Now the car doesn't seem to do this when it's warm out, although it might go up to 1/4 then drop to 1/8 quickly.

Is that my temp sensor, or any other ideas?

I've had a few new t-stats go bad within weeks before. cheap ones anyway.
The temp gauge uses it's own probe and not the CTS for displaying temps, in case you planned on getting a new sensor it's the little one on the front of the head. not the one near the t-stat thats the cts.
