Which is better G or swirl head

Hey I am looking to put a new cylinder head on my 87 T1 and I am trying to figuar out which head I should go with. I am not looking to modify the head.
Also which stock size valve seat valves are the best!
I am planning on using roller cam(stock type), roller rockers, new stock lifters, new MP srings & keepers,!

I used a g-head for a little while (without a custom cal) and really didn't like the throttle response, so i switched back to a swirl. There are a few people running g-heads with specific custom cals reporting good results.
