If you start an engine cold, and just let it idle up to operating temperature, a LOT of water can pool up in a low spot of the exhaust, such as the muffler, and when you take off, it'll literally leave a trail of water behind you. Especially in the winter.
H20 is a byproduct of gasoline combustion, and even a perfectly healthy engine can leave a trail of water when the conditions are right. I hear that the temperatures in FL have gotten down into the 40's, which is definitely cool enough for this to happen. If the head gasket is at fault, coolant consumption will be substantial and it would probably spit and sputter on startup after a 6 hour cold soak.
