Ya im an A/C tech, and not to beat a dead horse but you would be better off either doing a water/air with a ice resivor or an air/air with some form of chemical cooling. That will probably give you the best results to be had. Even though most automotive A/C systems are grossly oversized, it still wouldnt be affective( id spectulate it might drop the temp 5^F) because of the high temp of the aircharge, the high underhood temp and the velocity of the air moving over the coil. In my opinion the best(even though it still wouldn't be worth it,even if it works) Would be to get a custom 3.5ton/42000btu condensing unit for a med. temp aplication (like a cooler, lobstertank,etc.) and make a chiller out of it. Im not going to bother going into the rest of it, like trying to power it because its just not practical. Why bother trying to add all the extra weight when there are easier not to mention cheaper ways to drop your aircharge temp.

It's not really practical, but it is possible. As far as just straight up cooling, consider that in rough estimate the AC system has the capacity to cool about 200cfm 40-50*F (on a 110*F day it will come in the cabin at 60*F).

A 300hp engine is pushing the mass of air equivilent to 300cfm or more at upwards of 300*F.

As for cooling water down in between runs, I'm not sure if the gains are worth lugging around the compressor, condensor, the extra water tanks, etc. If one were to use a dedicated IC water radiator in addition to the AC, it could prevent the water from heating up.

If you were going to do this, you would want an IAT in control of the fuel and timing. If you run out of chilled water there is a potential for a huge temperature swing in a short amount of time.

There is a lot less to go wrong with a big air to air, but if you're going to have AC anyway, why not?
