is it possible to have a machine shop convert a non CD head over to a CD head by just drilling the crossdrills into it?

If you have a cross drilled block to mate the head to, cross drilled is best. Otherwise, it offers no additional benefits to drill it, and as was already mentioned, just another place to crack.
