86 T1 with Spearco side mount intercooler, MP 802 injectors, Mopar Performance ECU, late model large can waste gate actuator, no bleeds, and I have pressure checked all the vacuum lines with a pump as well as confirmed all the solenoids open and are passing air, no fault codes.

Every now and then when I step on the gas hard in 3rd gear I get what feels like a overboost spike, the engine cuts out and then immediately returns to normal. Of course when this happens I back off the throttle, but then from that point IT WONT DO IT AGAIN. I can drive and do full throttle accelerations without problem. It does it once then wont do it again. I dont think it has done it in any other gear, 2nd is a possibility but I know for sure it has done it 2-3 times in 3rd gear in the last 30-45 days.

Dont think it has anything to do with the ECU forgetting how to control the boost because the battery is not going dead nor has been disconected. Symtom seems to occur with warm or cold engine.

I can drive the car for days or weeks, maybe a month and it wont do it.

It's a just an every now and then thing. Any ideas gang?

This may be far fetched, but what about your fuel pump? I had a fuel pump going bad on my '84 Sunbird and it was similiar. I would be driving along and the engine would cut out suddenly for a second and then everything was fine. It was very intermitten and did not happen very often. Finally, the car stalled and wouldn't start. Come to find out, the fuel pump died. It would still make some pressure but not enough to even start the car. Just a thought.
