I think im going to buy a short block that has about 120k on it and i want to just slap in some new pistons, rings, and bearings. How can i know if i can go std instead of boring the cylinder and getting the grank/rods done?

You ask the machine shop to let you know if you need an overbore as soon as they know. The only way to know for certain is to measure for cylinder taper and out of round. Good luck on being able to use all standard stuff to keep costs down!
