It depends on how much core shift your block has.
In general, less is more here. Too much overbore makes the block really thin between the cylinders and leads to cracks if used for racing.
With the right block, an overbore in excess of .060" is possible, but I wouldn't do it unless I wasn't going to run the engine hard or maybe run it naturally aspirated. You have to have the block measured for core shift (usually sonically) before you try anything over .040". You can probably buy another whole rebuildable engine from a salvage yard for the price of re-sleeving your block.
I remember some engines in an old Mopar book that displaced over 2.3 liters....
