I'm planning on doing the SLH3 conversion on my GLH soon. So far I have
-single pin minivan calipers and brackets for the front
The rest of the parts are from the same 89 Shelby Daytona
-master cyl, and prop valve
-rear calipers, hubs, rotors (vented with drum style e-brake inside), and e-brake cables
My main ? is: Will the daytona e-brake cables work on the Omni, or do I use the stock L-body cables?
Also, should I use the Daytona prop valve or go with an aftermarket adjustable?

well if you go aftermarket you will need 2 prop valves and lots of time messing to set them rigth since its a diagonal system.

You don't want the vented rear disc. They're too strong for your setup in the omni. They can lock your rear tires up prematurely.

I used my GLH stock cables for my solid rear disc setup.

they are overkill unless you use the daytona's matching 11" front brakes and the right prop valve. if the daytona one is too aggressive, a spirit 4 wheel disc one is supposed to cut pressure to rear at a lower pressure.

i hate the SLH brake upgrade info. the 11" front brakes have the big-bore calipers like the minivan, but use the largest rotor like the RT cars! you will need to swap the knuckles, but all pre 91 parts will match up without throwing off the steering geometry!

measure the rotors....they should be about 10 inch diameter.

9-1/2 rotor/54mm caliper (most k cars, L body, etc)
10-1/4 rotor/54mm caliper (k car hd option, spirit, daytona, shadow, etc)
10-1/4 rotor/60mm caliper (dynasty, caravan, etc)
11 rotor/60mm caliper (spirit rt, datyona shelby/iroc/ rt, etc)

(early 90's grand caravan use the same brakes as the rt, only the rotors are drilled for the larger bolt pattern....meaning you can do a retrofit kit and just buy the correct rotors)
