While im cleaning up my suspension, (replacing shocks/struts/springs/bushings/mounts ect) Ive noticed that the wheel hubs are a bit more on the rusty side than Id like. I wanna sandblast the assembly but Im unsure if I could damage the wheel bearings (cramming them with sand?) in the proccess. Is this something I have to worry about? I will be getting the swaybar sanded by hand and painted w/ruberized undercoating then sprayed w/ bumper paint(flexable enough to go over the rubberized coating).

Why not use rust bullet. You should be able to wire off the loose stuff then coat. Leaves a powder coated "feeling" finish. Supposed to stop the rust in the process.

I'm not sure about painting over rubberized undercoating. Also it will wear off where it contacts the bushings.

The problem with sand blasting is the sand "will" get in places you don't want it to get in to. Is this for a 89+ Daytona? If so, I'm guessing you've already removed the hub assembly from the spindle? I know around here, the hub assemblys are like $8.00 at a salvage yard. If you wrapped the bearing section really well and taped the heck out of it, and then blasted it outside of a cabinet, you may be OK. Try to do as little blasting as possible and aim away from the taped bearing area. But then again, the sand goes where it wants to go. I don't know what pressing an old bearing out is like. Most of that's hidden in the wheels so that's a plus. The only time it will be seen is when you're working on the car.
