Is there a difference between a 89 t1 wiring and 91 2.5 n/a wiring. I've decided that this would be a better donor car than my spirit. Also is there anything special about a sundace RS? I got a chance on getting a 2 door sundace really really cheap.

To update on the 89 is a shadow es 2 door 2.5 turbo I auto 137,xxx miles. The 91 is a sundace rs 2 door 2.5 n/a auto 209,xxx miles.

I got complete cars to work with. I know I have change to a turbo fuel pump and turbo trans.

Well being a N/A car to Turbo car, there wil be differences.

With you wanting to convert a 91 car to earlier 89 might require some pin changes at the bulkhead connector under the dash. That is really the only problem I see, since you won't be reusing sensors and such. Chrysler liked to switch those connectors, as I found out.
