got a 89 mini that has a middle seat that is removable, my friends has 2 bench seats both of which are removable, i was wondering how hard it would be to add another bench and does anyone know if the mounting hardware is under the rear carpet for a back seat or if i can add another one

VERY easy, there are actually the Indents in the floorpan for the 2nd seat. All you have to do is cut the holes in the carpet and bolt in the Seat Bars and your set.
