Evening community, I have a 93 caravan with a 2.5l engine bolt pattern is 5x100 . just wanted to know if I could "update" the rear with a third gen set up ? Or use the same gen just larger bolt circle. There were a few options\ differences listed 5x100 with\ without abs and or sway bar. And then the larger setup. Are the brackets any different on 91-5's...

Pretty much any rear axle for a 91-95 will work.
The differences come in at the bolted on stub axles. If you're just looking to change your bolt pattern, you can just get a Grand van's hub/stub axle/brakes and swap it to your current axle.

I couldn't the tube rotted. I found one off a 95 at a semi local u pull yard. It has the 230mm drums on it though. I have a spare solid rotor rear set up, will that fit the van, differences ? Will those big arse drums fit any of the cars ?

Will it fit, yes.
Will everything else work, depends.
My 1992 had the same issue. It was 5x100 with the small brakes and no sway bars. I used a 1995 axle (big brakes and sway bar), I just reused my hubs/brakes on the 95 axle.
